Season meat with salt and pepper and place in a dish.

Infuse saffron with boiling water and keep aside. Dry toast the fennel, cumin, coriander and grind to a coarse form.

Crush garlic, mince herbs and mix all the marinade ingredients together. Add it to meat, rub into meat and keep in fridge for one hour.

Just one hour before grilling, take out from refrigerator, thread the meat cubes on skewers and keep aside.

Once grill in hot, place skewers on grill and cook for 5-10 minutes on each side, until the outside is charred and inside is just cooked. Serve hot.
